COD UDON NOODLE NIGHT 🎣
INGREDIENTS-
2 skinless & boneless cod loins 🎣
150g straight to wok - udon noodles 🍜
10g reduced sugar sweet chilli sauce 🌶️
1-2tbls premium dark soy sauce 🇨🇳
4 cherry tomatoes 🍅
1/4 red or white onion 🧅
Some sesame seeds for garnish.
METHOD-
Soak the cod loins with 1-2tbls of premium dark soy sauce for 1-2 mins.
While cod loins are soaking you can dice up your x4 cherry tomatoes & 1/4 onion.
Heat up a wok or frying pan with a little spray of oil or fry-light spray, once hot add your cod loins & udon noodles, keep on medium heat and separate udon noodles as they warm up.
Once your cod loins are flaking on one side, flip then add your diced cherry tomatoes & onion.
After the cod is close to fully cooked (won’t take more than 2-3 mins) you can use a rubber spoon or spatula to break the cod flakes up & mix everything together in the wok with your 10g of reduced sugar sweet chilli sauce.
Add a little more soy sauce if you like & plate up.
Garnish the top with some sesame seeds & enjoy!
